Zucchini Bread

This isn't the original recipe, but Mom changed it up a bit, so this is what we use! Enjoy the Recipe from the Amish Kitchen.


6 Eggs

2 cups Olive Oil

3 cups Sucanat (a natural sugar)

4 cups Zucchini

6 tsp Vanilla,

4 cups whole wheat flour (or 6 cups pastry flour)

2 tsp salt

2 tsp soda

6 tsp cinnamon

Bake @ 325 for around 1 hour (or until done)
